I’m Gyanee, a Mauritian pastry chef with a soft spot for fine pastry, thoughtful details, and a good cup of tea. My professional pastry journey began on the 18th April 2017. Along the way, I earned a diploma in Bakery and Pastry in Mauritius, then a Bachelor degree in French Pastry Arts from École Ducasse I spent time alongside incredible teams in high energy fine dining kitchens across France, Germany and Dubai.
Beyond the pastry kitchen, I’m usually found with my journal or a book, out on a walk, cleaning, I clean a lot lol, swimming, hiking, playing chess or badminton, and exploring new places whenever time and budget allow (a common challenge in the hospitality industry!)
This space is heavily inspired by my mentor, Chaya, who told me during my time in France: "Share your story and inspire more passionate people."
Her words stayed with me because I truly believe that growth in this industry comes from open sharing, curiosity, and community. I actually attempted a blog back in 2021, that didn't stick, but I’m back now with a clearer perspective, a lot more experience, and plenty to say.
